Château de Selle Côtes de Provence Rosé 2009 Château de Selle is located in the Côtes de Provence appellation perched on chalky hills enjoying generous amounts of sunshine. The proportion of stone in the soil is 40 to 50%, making it an arid soil, which, despite the presence of small yet highly fertile quantities of clay, produces small yields. The winery is located on 345 acres of which 160 acres are cultivated. Every year, more acres are being prepared by mechanically crushing the rocks and by tilling the soil.Winemaker NotesThe grapes are all hand picked and go through a stringent selective grape sorting. The grapes go through an extremely delicate pressing process. Fermentation is done in thermo-regulated vats followed by ageing in oak casks for 6 – 9 months.Tasting NotesThis rosé has a bouquet rich with plants. The palate is reminiscent of spice, apricot and grapefruit pulp. It pairs well with scallops, salmon marinated in dill, sweet and sour pork. It is best served at 50-54 degrees Fahrenheit.
