Pates/Rillettes

  Castaing founded in 1925 and Edouard Artzner founded in 1803 are amongst the best brand of pâté. The best Foie Gras and the best game is chosen to make these terrines , enjoy it with some cornichons on a crusty baguette and some wine.

 

  • The duck or the goose is cooked whole for more than 3 hours.
  • After this slow cooking in a cocotte, only the flesh is kept.
  • It is then stored in a terrine with some Goose or Duck fat.
  • Make sure you keep your rillettes in your fridge, serve it like a Pâté. 

It is perfect for casse croute (morning tea) serve it on toast or plain baguette, don't forget the cornichons, and a red wine from Bourgogne.
