90**** NV Pelorus. A lighter, fresher wine than the vintage label, thanks to a greater proportion of chardonnay with pinot noir. After fermentation, the wine is matured for eight months in a mix of stainless steel tanks, French oak barriques and large oak vats. It spends at least two years on lees after blending and bottling.
