Petaluma Croser Vintage

The cold Chardonnay and Pinot Noir juices were allowed to settle to clarity and then gravitated to 5 years and older Vosges oak barriques for primary fermentation with natural yeasts from a selection of strains from the Petaluma winery and vineyards. Malo lactic fermentation in barrique again with Petaluma’s own selected bacterial strains, softened the high natural acids and introduced complexity to the Croser base wines. Allowed to settle to clarity in barrique the base wines were racked and blended and finalised as 80% Pinot Noir and 20% Chardonnay.
